Characteristics and Identification of the Metabolite Profile of Arabica Coffee Oil by Using the Gas Chromatography-Mass Spectrometry (GC-MS)

Indonesia is a tropical country that suitable for coffee cultivation, and each producing region has its own unique distinct taste characteristics. This study aimed to determine the characteristics identification of metabolite profile arabica oil. The material used beans obtained from severals Micro, Small, Medium Enterprises (MSMEs) in Bukanagara Hamlet, Cupunagara Village, Cisalak, Subang-West Java. Coffee were roasted until medium dark roast level. oil was extract ground using n-hexane. Parameters be observed included yield, specific gravity, acid number, peroxide number profiles by Gas Chromatography-Mass Spectrometry (GC-MS). results showed had yield 9.43%, gravity 0.94, an 0.78 mg NaOH/g 8.23 meq/kg. There total 20 compounds identified based on area their distribution there are 11 exist high proportion. Keywords: Arabica coffee, Bukanagara, characteristics, GC-MS, profile.
